Choc Chip Sandwich Cookies

Choc chip cookies are loved by all. In this recipe I will show you how to make a healthy alternative to this popular treat. And just to take it that bit further I’ve gone ahead and turned these into Sandwich Cookies.

Choc Chip Sandwich Cookies
Time 35 mins | Makes 10
Ingredients

  • 2 cups White Beans (fresh or you can use 1 can of beans)
  • 1/3 cup Nut Butter (https://lavendercocokitchen.com/2018/07/05/nut-butter/)
  • 1/4 cup Coconut Syrup (you can use maple syrup)
  • 1-2 tsp Vanilla Extract
  • 1/2 tsp baking Soda
  • pinch Himalayan Salt
  • 60g chopped Dark Chocolate
  • chopped Walnuts (as much as you like, optional)

Dark Chocolate Ganache 

  • 100g chopped Dark Chocolate
  • 1/4 cup Boiling Water

Whipped Coconut Cream

  • 1 can Lite Coconut Cream (left in the fridge overnight)
  • 1 tsp Vanilla Extract

Method

First preheat the oven to 180°C. Add all ingredients into a blender (except the chocolate and nuts) and blend to a smooth paste. Next add the chocolate and nuts and blend for a couple of seconds to combine. Next place spoons of mixture onto a baking tray. Cook in the oven for 20-25 mins.

Next to make the ganache. First put the chocolate into a bowl then pour over the boiling water and leave it to sit for a few minutes. After sitting just stir it together to form a ganache.

To make the whipped coconut cream first place your mixing bowl in the freezer for 10 mins as a cold bowl produces a better result. Now open your can of coconut cream and scoop out the thick part of the cream and place in the bowl. Whisk on a high setting in your mixer until it’s firm, while its mixing (about halfway) you can add in the vanilla extract.

Once the cookies have finished cooking (they should be nice and brown in colour) just leave them to cool. Once the cookies have cooled completely you can assemble, take one cookie face down, add a spoon of the ganache and a spoon of the whipped coconut cream then finish with another cookie on the top.

It’s definitely a good idea to get used to eating healthy versions of your favourite snacks, setting yourself up for a lifetime of good health without having to miss out on your favourite treats.
