Choc Nut Brownies

This is a very decadent Chocolate Nut Brownie recipe, which not only tastes great, it’s also good for you too!

Choc Nut Brownies
Time 60 mins | Serves 10
Ingredients

  • 1 tbsp Flax Meal
  • 3 tbsp Water
  • 150g chopped Dark Chocolate
  • 1 1/2 cups Almonds
  • 1 cup Macadamias (Cashews or Brazil Nuts are both fine)
  • 1/4 cup Cacao Powder
  • 1/2 tsp Nutmeg
  • 1/2 tsp Cinnamon
  • pinch Himalayan Salt
  • 1 tsp Bi-carb Soda
  • 1 cup Light Coconut Cream
  • 1/2 tsp Vanilla
  • 2 tbsp Molasses
  • 30g Dark Chocolate (for the topping)

Method

First preheat the oven to 180°C.

Start by combining the Flax Meal with the Water in a bowl, this creates a jelly-like paste which is used as an egg replacement. Leave this mixture to the side.

Next melt the Chocolate (any way you like is fine), once melted just leave to the side.

Next add the Almonds and Macadamias to a food possessor and blend till they form a coarse paste. Add the Cacao, Nutmeg, Cinnamon, Salt and Bi-carb and combine in the blender. To finish add the Coconut Cream, the Egg Substitute you made earlier along with the Vanilla and Molasses, then finally add in the melted Chocolate then combine again.

Cook in the oven for 35-40 mins. Once cooked leave it to cool for 10 mins before removing it from the tin.

For the best result serve hot with the extra chocolate melted and drizzled over the top. If you like you can also serve these Brownies with a side of whipped coconut cream too.
