My easy and tasty French Toast recipe, that makes a great brunch treat. Made using one of my favourite fruits – Bananas. Rich in vitamins and minerals, bananas are also highly versatile, in this recipe taking the place of both eggs and sugar.
Banana French Toast

Ingredients
- 2 Ripe Bananas
- 3/4 cup Almond Milk
- 1/2 tsp Cinnamon
- 1/2 tsp Nutmeg
- 1/2 tsp Vanilla Bean Extract
- Sliced Bread (any kind you like, choose the healthiest option)
- Nut Butter
- Dark Chocolate (optional)
- Cinnamon
Method
Start by combining the Bananas, Almond Milk, Cinnamon, Nutmeg and Vanilla in a blender till they form a banana smoothie like mixture. Once combined pour the mixture into a flat bowl.
Next take one slice of bread and spread it with nut butter, add some grated Chocolate and Cinnamon if desired. Take a second slice of bread and sandwich it together, then dip the sandwich into the banana mixture, coating both sides well.
Now take a pan on a medium high heat, add some oil to the pan and fry the bread on both sides till golden brown, this should take around 2-3 mins per side.
Plate up the French toast as you like. It’s great with some Melted chocolate drizzled over the top and topped with some more cinnamon and grated chocolate.
