Chocolate Lamington Donuts

Ingredients
Donuts
- 1 cup Spelt Flour
- 1/2 cup Cacao Powder
- 1/3 cup Coconut Sugar
- 1 tsp Cinnamon
- 1 1/2 tsp Baking Powder
- 1 Flax Egg Replacer (1 tbsp Flax combined with 3 tbsp water)
- 1 tsp Vanilla Extract
- 1/2 tsp Apple Cider Vinegar
- 1 cup Almond Milk
Glaze
- 1/2 cup Cacao Butter
- 1 tbsp Coconut Sugar
- 1/2 cup Cacao Powder
- 1 tsp Coconut Syrup
- 3 tsp Vanilla Extract
- 2 tsp Coconut Oil
- Shredded Coconut for the top
Method
First preheat the oven to 180°C.
Start by adding the Flour, Cacao, Sugar, Cinnamon and Baking Powder to a food processor and combine. Next add in the Flax Egg, Vanilla, Vinegar and Milk to the mix and combine again. Take the finished batter and put it into a 6 donut mold tin. Bake in the oven for 10 mins. Once cooked leave them to cool for 10 mins.
Now to make the Chocolate Coating. First melt the Cacao Butter over a low heat. Once melted take it off the heat and mix in the rest of the ingredients till smooth.
To put it all together take a cooled donut and dip it into the glaze so it’s coated all over then finish with some shredded coconut sprinkled over the top.
