Choc Fruit & Nut Fingers
Time 25 mins | Makes 15 – 20
Ingredients
- 1 cup Almonds
- 1 cup Dark Chocolate
- 1/2 cup Dried Berries (Blueberries, Cranberries, Goji Berries)
- 1/4 tsp Cinnamon
- 1/4 tsp Nutmeg
- pinch Himalayan Pink Salt
- 1/2 cup Nut Butter
- 1 tsp Vanilla Extract
Method
Start by spreading the Almonds onto a tray and toasting them in a 200°C oven for 5 – 7 mins, keep an eye on them so they don’t burn.
Now melt the chocolate in a bowl over boiling water, once melted leave to cool.
Once the Almonds are done just roughly chop them, you can leave some whole. Next transfer the nuts to a bowl. Add in the Dried berried next and toss them together. Add in the Cinnamon, Nutmeg and Salt and combine. Next add in the Nut Butter, Vanilla Extract and the melted Chocolate and mix altogether. Transfer the mixture to a baking tray lined with baking paper and spread out to about 1cm thick, top with a few more Goji berries if you like (just push them onto the chocolate slightly), then transfer to the freezer for a few minutes to harden. Once done slice the Chocolate into fingers, any size you like.
