Strawberries & Cream Mousse Cheesecake

Strawberries & Cream, a classic combination, low sugar and very easy to create.

Strawberries & Cream Mousse Cheesecake
Time 35 mins | Serves 6
Ingredients

Strawberry Mousse

  • 2 cups Cashews
  • 5 Prunes
  • 1 1/2 cups sliced Strawberries
  • 1 tsp Vanilla Extract
  • rind of 1 Lemon

Whipped Coconut Cream 

  • 1 can Coconut Cream (chilled in fridge overnight)
  • 1 tsp Vanilla Extract

Serving

  • crushed Roasted Almonds (mixed with a pinch of Salt, Cinnamon and Nutmeg)
  • melted Chocolate
  • whole Strawberries
  • sliced Strawberries

Method

Start by soaking the Cashews and Prunes in boiling water for 20 mins and put your mixing bowl for the Whipped Coconut Cream in the fridge.

After 20 mins drain the water out of the Cashews and add to the blender along with the Strawberries, Vanilla and Rind and blend together till smooth. Once blended transfer the mousse to the fridge while you work on the next steps.

To make the Whipped Coconut Cream separate the hard part of the Coconut Cream into the chilled mixing bowl and whip on a high speed till it forms the whipped cream consistency.

To serve first dip the Strawberries into the melted Chocolate and roll in the crushed Nuts, leave in the fridge to set. Once set you can put it all together, start by sprinkling the remainder of the crushed nuts into the bottom of a serving glass, next put some of the strawberry mousse in, then take the sliced strawberries and place them around the sides. Top it off with the whipped Coconut Cream and a chocolate dipped strawberry.
