Choc Orange Lava Cake

The perfect way to finish an elegant meal, with the perfect combination of Chocolate and Orange, try out this decadent Lava Cake.

Choc Orange Lava Cake

Ingredients

  • 1/2 cup chopped Dark Chocolate
  • 2 tbsp boiling Water
  • 1/4 cup any Milk
  • 1/2 tsp Apple Cider Vinegar
  • 1 tsp Orange Rind
  • 1/4 cup Oats
  • 1/2 tsp Bi-Carb Soda
  • 2 tbsp Cacao Powder
  • 1 tsp Cinnamon
  • 1 tbsp melted Coconut Oil
  • 1 tsp Vanilla Extract
  • 1/4 cup mashed Banana (aprox. 1/2 med banana)

Method

First preheat the oven to 170°C.

Start by combining the Milk and Vinegar in a bowl and leave to sit.

Next add the Chocolate to a bowl and pour over the boiling Water and leave to sit for a couple of minutes, then stir till its all melted. Once melted mix in the Orange Rind and leave in the freezer.

Now add the Oats to a food processor and blend till fine. Now add in the remainder of the ingredients along with the Milk you set aside and 2 tbsp of the Choc Orange mixture. Blend all of this together.

Next take Two Ramekins and put 1/4 of the mixture into each one, then divide the remaining Choc Orange mixture between the two (this makes the lava portion) and finally top each ramekin with the remaining cake mixture. Transfer to the oven for 20 mins to cook.

Once cooked you can serve it in the ramekin with some Cacao and Orange rind dusted over the top. Best eaten as is fresh out of the oven or with some whipped coconut cream or Ice Cream.
