These Brownies are a fun treat to make. They are made out of Black Beans which make a nice moist Brownie and they have some amazing health benefits too.
Rocky Road Brownies
Time 30 mins | Serves 9
- 2 cups Black Beans (tinned or freshly cooked and cooled)
- 1/2 cup Cacao Powder
- 1/2 cup Coconut Flour
- 1 tbsp Instant Coffee
- 1 tsp Vanilla Extract
- 1/3 cup melted Coconut Oil
- 1/4 cup Maple/Coconut Syrup
- 1/2 cup Plant Milk (any kind is fine)
- 1/2 cup chopped Dark Chocolate
- 1/2 cup dried Cranberries
- 1/2 cup shredded Coconut
- 1/2 cup chopped Walnuts
First preheat the oven to 180°C.
Start by adding the Beans, Cacao, Flour, Coffee, Vanilla, Oil, Syrup and Milk to a food processor and combine (if the mixture is too thick add an extra tbsp of plant milk. Once combined add half the mixture into a lined tin.
Next combine the remaining ingredients in a bowl and pour half of that over the top. Then put the remaining Brownie mixture over the top and of course finally top with the remaining Chocolate, Cranberries, Coconut and Walnuts.
Bake for 20 mins. Serve hot with some melted chocolate over the top.
