This is the perfect Christmas treat, Vegan, Healthy and it tastes Great!
Spiced Ginger Log

Ingredients
Ginger Cookies
- 1 cup Oats
- 1/2 cup Almonds
- 1/2 cup Cashews
- 1 tbsp Coconut Sugar
- 1 tsp Baking Powder
- 2 tsp Ground Ginger
- 1 tsp Cinnamon
- 1/2 tsp Ground Cloves
- 1/2 tsp Ground Cardamom
- 1/2 tsp Nutmeg
- 1 tbsp Coconut Syrup
- 2 tbsp Melted Coconut Oil
- 2 tbsp Almond Milk
- 1/4 cup chopped Naked Ginger
Spiced Ginger Log
- 1 batch Whipped Coconut Cream
- Fruit Juice / Wine
- Naked Ginger
- Cinnamon
- Nutmeg
Method
First preheat the oven to 180°C.
To make the Ginger Cookies start by combining the Oats, Almonds and Cashews into a food processor and blend till fine. Next add in the Coconut Sugar, Baking Powder, Ginger, Cinnamon, Cloves, Cardamom and Nutmeg and blend again. Now add in the Coconut Syrup, Coconut Oil and Almond Milk then blend to combine. Lastly add in the Naked Ginger and mix through.
Now you’ve made the dough divide it into 12 balls and flatten them out onto a baking tray to form the Cookies. Cook for 10 mins. Once cooked allow them to cool completely.
The cookies are done but if you wish to make the Log then start by making 1 batch of Whipped Coconut Cream and mix in some chopped Naked Ginger, Cinnamon and Nutmeg. Next take the cooled Cookies and quickly dip them in the Juice then sandwich together with another dipped cookie and the Coconut Cream, then stand them up on a plate to form a log. Top with some more Naked Ginger, Cinnamon and Nutmeg.
It’s best to keep this in the fridge overnight before serving so the flavours can intensify and the Cookies can soften. Make sure when you cut it you cut at an angle to see the pattern of the Cookies.
