In this first edition of Lavender Coco Cooks with I show Lakshmi how to make her favourite Cookies Vegan and Healthier.
Choc Chip Cookies
Time 20 mins | Makes 12
Ingredients
- 2 1/2 cups Besan (Chickpea Flour)
- 1 tsp Cinnamon
- 1 tsp Nutmeg
- 1 tsp Baking Powder
- 1/2 cup Coconut Sugar
- 2 tsp Vanilla Extract
- 1/2 cup Coconut Oil
- 1/2 cup Almond Milk
- 100g chopped Dark Chocolate
Method
First preheat the oven to 180°C.
Start by combining the Besan, Cinnamon, Nut meg and Baking Powder in a food processor. Next add in the remaining ingredients, except the Chocolate, and blend till combined.
Roll the mixture into balls and flatten onto a tray. Bake for 10 – 15 mins.
