Marshall discovers the magic of Aquafaba Ice Cream!
Banana Sorbet & Caramel Date Sauce

Ingredients
Banana Sorbet
- 1/2 cup Aquafaba (water from a can of Chickpeas)
- 1 tbsp Maple Syrup
- 2 tbsp Vanilla
- 2 ripe frozen Bananas (slightly thawed)
- 2 – 3 tbsp Almond Milk
Caramel Date Sauce
- 3/4 cup Dates (softened in boiling water)
- 1/2 cup Hot Water
- 1/8 cup Nut Butter
- 1/2 tbsp Maca Powder
Spiced Roast Nuts
- 1/2 cup Almonds
- 1/2 cup Cashews
- 1/2 cup Walnuts
- 1/2 tbsp Olive Oil
- 1/2 tbsp Maple Syrup
- 1/4 tsp Cinnamon
- 1/4 tsp Nutmeg
- 1/4 tsp Cardamon
- 1/4 tsp Ginger (powder)
- pinch Salt
- pinch Pepper
Method
Start by making the sorbet. First whip the Aquafaba, Maple and Vanilla together in a mixer till stiff peaks form. While doing that blend the Frozen Banana and Almond Milk till smooth. Once done fold the Banana mixture into the Aquafaba Meringue. Place this mixture into the freezer to set.
Next make the Date sauce, simply blend all thew ingredients in a blender till smooth and store the finished sauce in the fridge.
Finally you can make the roasted Nuts before serving. First preheat the oven to 180°C. Mix all of the ingredients together, spread onto a tray and roast for 10 mins.
Serve the Ice Cream, topped with the Date Sauce and Roasted Nuts.
