Nutty Easter Bunnies

Ingredients

No Bake Coconut Macaroon Balls

  • 1/2 cups Desiccated Coconut
  • 1 cup ground Almonds
  • 1/2 cup melted Coconut Oil
  • 3 tbsp Maple Syrup (or Coconut Syrup)
  • 2 tbsp Nut Butter

Vegan White Chocolate

  • 1 cup Cashews (soaked in boiling water for 10mins and drained)
  • 1/2 cup melted Coconut Oil
  • 1/2 cup melted Cacao Butter
  • 2 tbsp Maple Syrup
  • 1 tsp Vanilla Extract

Decorations

  • Dried Apricots
  • Sultanas
  • Goji Berries
  • Vegan Licorice
  • Extra Desiccated Coconut

Method

Start by making the Macaroon Balls, simply mix all the ingredients together and place the mixture in to the freezer until firm enough to roll into balls. Next roll the cooled mixture into balls, 3 sizes; large for the bodies, medium for the heads and small for the tails. Place the balls into the freezer to harden.

To make the White Chocolate blend together all the ingredients till smooth then cool the mixture in the fridge.

Once the Macaroon Balls are form dip them into the cooled White Chocolate and piece the Bunnies together. Make ears from the Dried Apricots, eyes from the Sultanas and Mouths from the Goji Berries. You can make whiskers from anything you like, I used Vegan Licorice. Stick the features on and sprinkle some more desiccated coconut over the bunnies, then return them to the freezer to set.
