Chocolate Mint Slice

A Healthier Vegan version of a traditional favourite.

Chocolate Mint Slice
Time 50 mins | Serves 10 – 12
Ingredients

Base

  • 1 cup Almonds
  • 1/2 cup desiccated Coconut
  • 1/4 cup Cacao Powder
  • 1 tbsp Maple Syrup
  • 2 tbsp Coconut Oil

Mint layer

  • 1 1/2 cups Cashews (soaked in boiling water)
  • 1/2 cup Coconut Cream
  • 1/2 cup melted Cacao Butter
  • 1/4 cup Maple Syrup
  • 1 1/2 – 2 tsp Peppermint Essence

Topping

  • 2/3 cup Dark Chocolate
  • 2 tbsp Boiling Water
  • pinch Spirulina

Method

Start by making the base, simply blend all the ingredients together and press into a lined pan and leave in the fridge to set.

Next make the filling. Blend all the ingredients together till smooth. Now keep aside 1/2 a cup of this mixture for the topping. Pour the rest of the mixture onto the base and return to the fridge to set for 30 mins.

For the topping first leave the Chocolate to sit in the Boiling Water for 1 min to melt down then stir till smooth (add extra water if required). Separately, take the 1/2 cup of mint mixture you set aside and divide it into two portions, in one of the portions mix in a pinch of Spirulina Powder. Spread the three toppings over the top of the set slice (for the best effect spread the toppings in alternating lines then use a sharp knife to run perpendicular down the lines to get the pattern effect). Store in the fridge.
