Rohan demonstrates one of his favourite recipes, a quick, easy and tasty teacake.. made a bit healthier!
Orange & Cinnamon Teacake
Time 30 mins | Serves 6 – 8
- 2 large Oranges (Juice and Zest – about 3/4 – 1 cup of Juice)
- 1 cup Spelt Flour
- 1/2 cup Oat Flour (Oats blended till fine)
- 2 tsp Baking Powder
- 1/2 cup Coconut Sugar
- 1/2 cup Rice Bran Oil
- 1 tsp Cinnamon (topping)
- 1 tsp Coconut Sugar (topping)
First preheat the oven to 200°C.
First Zest and Juice the Oranges. Next Put all the dry Ingredients in a blender and combine, then add in the wet ingredients and blend till smooth. Pour the batter into a lined cake tin and sprinkle the Cinnamon and Sugar (combine them together in a bowl first) over the top of the cake. Bake for 20 mins. Serve warm or cold.
