The flavours of a Cherry Ripe Bar in a delicious healthy slice!
Cherry Ripe Slice

- 1 1/2 cups roasted Almonds & Cashews
- 1/2 cup Desiccated Coconut
- 1/4 cup Dark Chocolate
- 2 tbsp Coconut Oil
- 1/2 cup Coconut Cream
- 150g chopped Dark Chocolate
- 1/2 cup Plum or Cherry Compote
- 1/4 cup Dried Cranberries
- Dried Cranberries
- Desiccated Coconut
- Melted Chocolate
First to make the base, start by melting the Chocolate and Coconut Oil in a pan. Next combine with the Nuts and Coconut in a blender to form a crumbly dough. Press mixture into a lined pan (20x30cm) and leave in the fridge to set.
While that sets you can make the filling. First heat the Coconut Cream till boiling and pour over the Chocolate, leave to sit for 1 min, then stir until it’s smooth. Next mix in the Compote and Cranberries and pour over the set base.
Finally top with extra Dried Cranberries, Desiccated Coconut and Melted Chocolate. Chill in the fridge till set, then cut into bars.
