Chickpeas are the best alternative to using nuts in a dish. Great if you have a nut allergy and cheaper than buying nuts.
Roasted Chickpeas & Chickpea Bark
Time 50 mins | Makes 2 cups roasted Chickpeas
Roasted Chickpeas
- 2 cups cooked Chickpeas
- 1 tbsp Olive Oil
- 1/4 tsp each Salt & Black Pepper
- 1 tsp each Maple Syrup & Cacao Powder
- 1/2 tsp each Cinnamon & Cardamom Powder
Chickpea Bark
- 2 cups Roasted Chickpeas (above)
- 1 cup chopped Dark Chocolate
Method
First preheat the oven to 200°C.
First to make the Roasted Chickpeas, start by drying the chickpeas with paper towel. Next place the dry Chickpeas on a lined baking tray and put into the preheating oven for 10 – 15 mins. Afterwards combine the dried out Chickpeas with the remainder of the ingredients and roast in the now heated oven for 25 – 30 mins, until medium brown and crispy, being careful not to burn them.
Once cooked, leave to cool then you can store them in an air tight container and use or snack on them whenever.
To make the Chickpea bark, simply melt the Dark Chocolate down and stir in the Roasted Chickpeas, spread out onto a lined tray and leave to set in the fridge. Once set simply slice into pieces.
