An extra healthy Vegan Chocolate Mousse made using Beetroot! Easy to make for an everyday treat!
Beetroot Chocolate Mousse
Time 40 mins | Makes 1-2 Cups
- 1 – 2 small Beetroots (approx 1 cup of chopped Beetroot)
- Star Anise, Cardamom, Cinnamon and Cloves
- 2 tbsp Cacao Powder
- 4 tbsp Coconut Cream
- 4 – 5 Dates (soaked in boiling water for 10 – 15 mins)
- 1 tbsp Nut Butter
- 1 tsp Vanilla Extract
- 1/2 tsp Cardamom Powder
- 1/2 tsp Cinnamon Powder
- 1/2 tsp Ginger Powder
Start by cooking the Beetroots. Chop them up and put them into a pot with enough water to cover. Add in the Star Anise, Cardamom, Cinnamon and Cloves and boil until tender and the liquid has reduced.
To make the Mousse simply add all the ingredients into a blender and blend till smooth.
Eat as is, or serve in small glasses. Alternatively you can serve in Chocolate Cups (as pictured) topped with grated chocolate and lemon rind. Also goes well with fresh fruit and ice cream.
