- 3/4 cup Aquafaba (chickpea liquid cooled in the fridge)
- 1/4 tsp Xanthan Gum
- 1 1/2 tsp Vanilla Extract
- 1/2 cup very fine Coconut Sugar (made by blending coconut sugar on high for 30 seconds till it becomes fine)
To make the Meringue simply whip the Aquafaba, Xanthan Gum and Vanilla together till stiff peaks form. Next add in the Sugar gradually while continuing to whip until mixture is in stiff peaks and glossy (takes around 10 mins).
