Healthy Vegan Pastry

Finally a Pastry that is good for you! This recipe is Vegan, Low Carb and has No Oil.

Healthy Vegan Pastry
Time 45 mins | Makes 1 Qty
Ingredients

  • 1 1/4 cups finely ground Almonds
  • 1/3 cup Rice Flour (or Cornflour)
  • 2 tbsp Flaxmeal
  • 5 tbsp Water
  • 1 tsp Cinnamon
  • 1/4 tsp Nutmeg

Method

First combine the Flaxmeal and Water in a small bowl and leave to sit for a few minutes to thicken. Next simply combine all ingredients together to form a non-sticky dough.

Roll the pastry to size between two sheets of baking paper and press into greased tins. Place these in the freezer to set for 20 mins.

To bake the pastry first preheat the oven to 200ยฐC and bake for 15 – 20 mins.

The best use of the pastry is as a tart or pie filled with anything you like. Fillings shown here are Lemon Lime, Beetroot Chocolate Mousse and Aquafaba Meringue.
