The perfect accompaniment to your Christmas Pudding or great on its own!
Christmas Custard & Ice Cream
Time 30 mins | Makes –
- 1 cup Coconut Cream
- 2 cups Almond Milk
- 1/4 cup Maple Syrup
- 4 tbsp Rice flour
- 1 tbsp Vanilla
- 1 tsp Nutmeg
- 1/2 tsp Cinnamon
- 1 quantity of Custard (above)
- 1 cup mixed Dried Fruit
- 1/2 cup Whiskey/Orange Juice
- 1/4 cup chopped Dark Chocolate (optional)
- 1/4 cup any Nuts (optional)
To make the Custard start by combining the Milk and Cream in a pan. Take 1 cup of this mixture out, combine it with the rice flour and set aside. Add the Syrup to the pan and stir over a medium heat until it boils. Turn the heat down a bit and add the Flour mixture in along with the remaining ingredients. Continue whisking till smooth (the thickened mixture should coat the back of a wooden spoon and stick). The custard can be served hot or cold.
If you want to make the Ice Cream, start by soaking the fruit in the whiskey overnight. To make the Ice Cream simply combine all the ingredients together in an ice cream maker.
These both go great with a Vegan Christmas Pudding.
