Christmas Pudding Truffles
Time 30 mins | Makes 20

  • 2 cups Dark Chocolate
  • 1 cup Coconut Cream
  • Cacao Powder
  • Extra Chocolate for coating

  • Rosewater
  • Peppermint Essence
  • Dried Fruit

  • Dried Lavender
  • Rose Petals
  • Shredded Coconut
  • Crushed Nuts

To make the truffles start by heating the coconut cream in a pan until just boiling. Pour the heated coconut cream over the chocolate and leave to sit for 1 minute then stir till smooth.

If you wish to, at this stage you can mix in a few drops of any flavouring you like (to taste). Then leave the mixture in the fridge for 2 – 3 hours to set (or overnight).

Once set, scoop the mixture out into balls, roll in the cacao and put into the freezer tot harden. Whilst those set melt the extra dark chocolate. Once the truffles have set remove them from the freezer and dip in the melted chocolate, topping with anything you like. Leave to set in the fridge to finish.

These can be packaged as shown for gifts and should be stored in the fridge.
