Vegan Churros & Choc Orange Sauce

Treat someone this Valentine’s Day with my Healthy Vegan Churros 😍.

Vegan Churros & Choc Orange Sauce

Ingredients

Churros

  • 1 cup Water
  • 3 tbsp melted Coconut Oil
  • 1 tbsp Coconut Sugar
  • 1/4 tsp Salt
  • 1 tsp vanilla
  • 1 cup Spelt Flour
  • 1/2 cup Aquafaba
  • 1/4 tsp Xanthan Gum
  • melted Vegan Butter
  • 2 tbsp fine Coconut Sugar (can be achieved by blending coconut sugar)
  • 1 tsp Cinnamon

Choc Orange Sauce

  • 1 cup Coconut Cream
  • 1 cup chopped 70% Dark Chocolate (approx. 100g)
  • 1 tsp Cardamon
  • zest of 1 small Orange
  • 2 tsp Cointreau(optional)

Method

First preheat the oven to 180°C.

First Start by whipping the aquafaba and xanthan gum together to make a meringue. Whilst it’s whipping combine the water, oil, sugar, salt and vanilla in a pan over a med-high heat, stirring until the water dissolves. When the water boils remove it from the heat and mix with the flour to forma dough. When the aquafaba is whipped to form stiff peaks mix it into the dough a few spoonfuls at a time.

Next put the dough mixture into a piping bag with a fluted tube and pipe lengths onto a baking tray lined with baking paper. Bake for 25-30 mins, until brown and crispy. Remove from the baking tray and leave them on a wire rack to cool a bit. Next brush the churros with the vegan butter and roll them in the combined fine coconut sugar and cinnamon.

Serve with a sauce of your choice, like Dulce de Leche or this Choc Orange Sauce.

To make the Choc orange Sauce, first heat the cream till it starts to boil then pour it over the chocolate, leaving it to sit for 2 mins. Stir the chocolate till it becomes smooth then add in the remaining ingredients and stir again. Place in the fridge to cool and serve with Churros.
