After Dinner Mints

A healthy combination of Dark Chocolate and Mint made even better! Low in sugar and free of additives. The perfect After Dinner treat!

After Dinner Mints
Time 25 mins | Makes 16

Raw Chocolate

  • 1/2 cup melted Cacao Butter
  • 1/2 cup Cacao Powder
  • 1 tbsp Coconut/Maple Syrup
  • 1 tsp Vanilla
  • pinch Salt

Peppermint Cream

  • 3/4 cup Cashews (soaked in boiling water for 15 mins and drained)
  • 1/4 cup melted Cacao Butter
  • 1/4 cup Coconut Cream
  • 1 tbsp Maple Syrup
  • 1 1/2 tsp Peppermint Essence


To make the Chocolate, stir all the ingredients together till smooth. Spread half the chocolate mixture onto baking paper in a rectangle shape and leave in the fridge to set.

To make the Peppermint cream simply blend all the ingredients together till smooth. Set aside a small amount of the cream for the top. Next spread the rest of the cream over the set chocolate base. Spread the remaining chocolate over the top and finish with the leftover peppermint cream, piping on for decoration.

Leave the mints in the fridge to set and when they are mostly firm mark squares into them then return them to the fridge to set fully. Once fully set simply cut the squares out along the marked lines. Store in an airtight container in the fridge.
