Rich & Decadent Chocolate Frosting

A decadent yet still healthy frosting! Perfect when you want an indulgent topping for that special cake or dessert or just to treat yourself.

Rich & Decadent Chocolate Frosting
Time 5 mins | Makes enough to Ice two Cakes or 12 Muffins
Ingredients

  • 3/4 cup chopped Dark Chocolate
  • 1/2 cup Coconut Milk
  • 1 cup Dates (soaked in boiling water for 20 mins and drained)
  • 1/4 cup Cacao Powder

Method

To make the Frosting, start by putting the chocolate and coconut milk in a pan and heat gently till melted, then stir till smooth. Leave the melted chocolate to cool a little then pour into a blender along with the dates and cacao and blend till smooth. Cool the completed frosting in the fridge and it is ready to use.

It’s best used as soon as its cold, it can be piped or spread onto cakes. You can even use it as filing for cookies, cakes or tarts. If left in the fridge for a while it will go hard and you may need to mix in a very little hot water before use.

This frosting goes perfectly with my Chocolate Sponge Cake.
