Vegan Anzac Biscuits

Vegan Anzac Biscuits
Time 60 mins | Makes 16
Ingredients

  • 1/2 cup Oat Flour (made by blending 1/2 cup oats till fine)
  • 1/2 cup Rolled Oats
  • 1/4 cup Desiccated Coconut
  • 2 tbsp Coconut Sugar
  • 1/2 tsp Cinnamon
  • 1/2 tsp Ginger
  • 3 tbsp Nut Butter
  • 1 tbsp Coconut Syrup or Molasses
  • 3 tbsp Water
  • 1/4 tsp Bi-Carb Soda

Method

First preheat the oven to 180°C.

First start by combining the oat flour, oats, coconut, sugar and spices in a bowl. Heat the nut butter, syrup and water together in a pan until melted and smooth, then add the bi-carb soda and stir in. Next combine this mixture with the dry mixture.

Once combined, scoop tablespoons of mixture onto a tray lined with greaseproof paper and flatten a little with a fork. Bake for 15 mins till golden.

For an extra special treat, sandwich two biscuits together with some Decadent Chocolate Frosting, Lemon Cream or Whipped Coconut Cream.
