A fun and healthy recipe to treat your Mum on Mother’s Day.
Flower Pot
Time 20 mins (plus 3 hrs setting time) | Makes 1
Ingredients
Chocolate Mousse (Soil)
- 1/2 can Coconut Cream
- 1/4 cup Cacao Powder
- 1 – 1 1/2 tbsp Maple Syrup
- 2 tbsp Chia Seeds
- 1/2 tsp Vanilla
- 1/2 tsp Coffee Powder
- 1/2 tsp Cinnamon
- 1/2 tsp Cardamom
- Any add-ins (chopped chocolate, crushed nuts, dried fruit, etc.)
Flower
- 3 – 4 Dried Apricots
- 1 Prune
- melted Dark Chocolate
Extras
- a Straw/Wire
- a Small Pot
- Ribbon Bow
- grated Dark Chocolate
- Matcha Powder
Method
To make the Chocolate Mousse for the Soil simply blend all of the ingredients together, then stir in any add-ins of your choice. Next transfer the Mousse to the small pot and chill in the fridge till firm (3 hrs or overnight).
For the Flower, start by cutting the apricots in half to make petals and cut a piece off the prune for the center. Next place a coin sized bit of melted chocolate onto a baking sheet and stick the apricot petals to it. Top with a little more melted chocolate and press the prune piece into the center. Leave in the freezer for a few minutes to set. Once set remove from the freezer and turn over, place a straw or wire onto the back and use some more melted chocolate to attach it, return to the freezer to set again.
To finish, stick the flower into the middle of the soil and finish by sprinkling some grated chocolate and matcha powder over the soil. Finish with a bow around the pot and you’re done.
