The Best Vegan Cream Cheese Frosting

Ingredients

  • 1 cup cashews (soaked in boiling water 1hr or more & drained before use)
  • 1/2 cup macadamias
  • 1/4 cup lemon juice
  • 3 tb maple syrup
  • 2 tb almond milk
  • 2 tb melted coconut oil
  • 1 tsp vanilla
  • 1/8 tsp salt

Method

Blend all ingredients together until smooth – add a little more almond milk if needed for smooth blending.

Cool before use and use to frost any cake or cupcakes. (Also a nice dip with fruit!)

Store in the fridge.

*Can double recipe to make a larger quantity suitable to fill layer cakes of 3-4 layers.*
