Indulgent Choc Chip Cookies


  • 1 cup semi-firm coconut oil
  • 1/2 cup maple syrup
  • 1/4 cup coconut sugar
  • 1 Tb vanilla

Beat these ingredients together until smooth, then add in:

  • 2 cups oat flour
  • 1 & 1/3 cup spelt flour
  • 1 tsp baking powder
  • 1 tsp baking soda
  • pinch salt
  • 1/3 cup almond milk

Mix till smooth then stir in:

  • 100-150g chopped dark chocolate (and/or dried fruit & nuts if desired)


Form mixture into 8-10 balls and press into large cookie shapes with damp hands (to prevent mixture sticking to hands).

Put on trays lined with baking paper, leaving space between each.

Bake at 180°C for about 10-12mins. Don’t overcook. They will seem soft but will harden as they cook.
