Ingredients
- 1 cup semi-firm coconut oil
- 1/2 cup maple syrup
- 1/4 cup coconut sugar
- 1 Tb vanilla
Beat these ingredients together until smooth, then add in:
- 2 cups oat flour
- 1 & 1/3 cup spelt flour
- 1 tsp baking powder
- 1 tsp baking soda
- pinch salt
- 1/3 cup almond milk
Mix till smooth then stir in:
- 100-150g chopped dark chocolate (and/or dried fruit & nuts if desired)
Finally:
Form mixture into 8-10 balls and press into large cookie shapes with damp hands (to prevent mixture sticking to hands).
Put on trays lined with baking paper, leaving space between each.
Bake at 180°C for about 10-12mins. Don’t overcook. They will seem soft but will harden as they cook.
