Ingredients
- 2 cups desiccated coconut
- 1 cup mixed, dried fruit of choice (use a mix of colours eg: apricots, ginger, cranberries, goji berries, sultanas ect)
- 1/2 – 3/4 cup roasted nuts of choice (use some pistachios if you want a green colour, you can also roast nuts using my spicy roast nut recipe!)
- 1 cup cashews soaked in boiling water 15-20mins & drained
- 1 cup melted cacao butter
- 2tb vanilla extract
- 1/4 cup maple syrup
- A little cinnamon and nutmeg if liked
Method
Blend together the cashews, cacao butter, vanilla and syrup till smooth. Then combine this with all the other ingredients and mix well. Press into a tin lined with baking paper and put in fridge or freezer to set, then cut into pieces and store in the fridge.
*For a nice decorative effect – drizzle the top with melted chocolate before cutting!*
