Ingredients
- 1/2 a large cucumber (peeled if liked) and chopped
- 1/2 cup fresh mint leaves
- 1/2 cup fresh lemon juice
- 1/2 cup water
- 1-2 tbs maple syrup (to taste)
- sparkling water
Method
Blend all ingredients (except sparkling water) until smooth. Pour into glasses halfway full, then top with some sparkling water. (Add ice if liked)
Double the recipe to make a greater quantity! This is a great healthy, refreshing drink to start the new year!
