Green Lemonade (Cucumber and Mint)


  • 1/2 a large cucumber (peeled if liked) and chopped
  • 1/2 cup fresh mint leaves
  • 1/2 cup fresh lemon juice
  • 1/2 cup water
  • 1-2 tbs maple syrup (to taste)
  • sparkling water


Blend all ingredients (except sparkling water) until smooth. Pour into glasses halfway full, then top with some sparkling water. (Add ice if liked)

Double the recipe to make a greater quantity! This is a great healthy, refreshing drink to start the new year!
