Ingredients (best to have them all at room temperature)
- 1/3 cup chopped vegan dark chocolate (70% cacao)
- 1/4 cup coconut cream
- 1/2 tb cacao powder
- 1/2 tb vanilla extract
- 3/4 cup almond or coconut milk
- 1/2 tsp coconut syrup or maple syrup (optional, add more or less to taste)
- 1/2 tb whiskey (optional, add more or less to taste)
Place chopped chocolate and coconut cream in a small saucepan and melt on low heat, stirring until smooth. Stir in cacao powder and vanilla, then gradually add milk 1/4 cup at a time, stirring until smooth – (can keep it on low heat while adding all these ingredients). Remove from heat and stir in syrup and whiskey if using. Then put in fridge till very cold (or in freezer to cool it more quickly).
Cut ears off chocolate bunnies (easier if you dip knife in hot water beforehand) and pour in the iced chocolate drink. Add a scoop of ice cream and top with whipped coconut cream, then place ears back on top. Add a straw and spoon and enjoy!

*Whiskey can be omitted for a non alcoholic drink*
