- 1+1/2 – 2 ripe avocados
- 1+1/2 – 2 limes (juice and zest)
- 1 – 1+1/2 tb maple syrup
- 2-3 tb coconut cream
- prunes/dates for serving (optional) or grated dark chocolate
Cut avocados in half length wise, remove stones and scoop out flesh. (Leave the skins intact if you wish to serve the mousse in these). Put the avocado flesh, lime juice & zest, syrup and coconut cream in a blender then blend until smooth. Add a little more coconut cream if needed for smoother blending.
Spoon or pipe the mousse into the avocado shells and place a prune or date in them to resemble the avocado stone and serve. Alternatively spoon or pipe the mousse into glasses or bowls.
Top with a little grated dark chocolate if liked or some extra lime zest. Enjoy!
