- 3/4 cup chopped pineapple
- 1 tsp coconut sugar
- 1/2 tsp cinnamon
- pinch nutmeg
- 3/4 cup coconut cream
- 1/4 cup almond/coconut milk
- 2 tsp Rum or more to taste (optional)
- Extra whipped coconut cream, nutmeg & pineapple for topping (optional)
Heat pineapple, sugar and spices in a small pan on medium heat until the sugar is dissolved 3-4mins. Add cream and milk and heat until just simmering (not boiling). Remove from heart and stir in rum if using then blend in a blender until smooth.
Pour into a glass or mug and top with whipped coconut cream, a sprinkle of nutmeg and toasted pineapple if liked. Enjoy!
