*Makes about 8 bars, double mix for greater quantity*
- 1/3 – 1/2 cup dates (depending how sweet you want it)
- 1/2 cup almonds
- 1/2 cup walnuts
- 1/4 cup rolled oats
- 1/4 cup chia seeds
- 2 tb pumpkin seeds (pepitas) + 1-2 tb extra for top
- 1 tb flax seeds or meal
- 1/2 tsp cinnamon
- 1/4 tsp turmeric
- 1/4 tsp ground ginger
- 1/3 cup tahini
- 1 + 1/2 – 2tb melted coconut oil
First soak dates in boiling water 5-10mins and drain.
Blend almonds and walnuts till coarsely ground, then add all other ingredients into blender and process until the mixture is starting to stick together (Start with 1 + 1/2 tb oil and add a bit more if mixture seems too dry).
Press firmly into a tin lined with baking paper. Sprinkle with extra pepitas and press them down into the top.
Place in fridge or freezer until firm, the cut into bars. Store in fridge.
