Chocolate Cupcakes w/ Healthy Choc Frosting

Everyone’s favourite chocolate treat made healthier & better for you than traditional choc cupcakes recipes or store bought ones! Dairy and Egg Free with a light fluffy texture!

Cupcakes

Ingredients:

  • 1/2 cup almond milk & 1/2 tb apple cider vinegar – whisked together and sit to curdle 5mins
  • 1/4 cup melted coconut oil
  • 1 cup spelt flour
  • 6 tb cacao powder
  • 1/2 cup coconut sugar
  • 1 tsp baking powder
  • 3/4 tsp baking soda
  • 1/4 tsp salt
  • 1/2 tb vanilla
  • 1/2 cup boiling water

Method:

Mix the dry ingredients together, then whisk in the wet ingredients, lastly adding the boiling water. Whisk till smooth (Mixture will be quite runny).

Pour into cupcake papers and bake 180°C about 12-15mins for small cakes and 15-20mins for medium cakes. To check if cooked, stick a skewer or tip of knife into the cakes and it should come out clean.

Cool on a wire rack and then in the fridge. Ice when cold.

Healthy Choc Frosting

Ingredients:

  • 1 cup dates or prunes
  • 1/2 cup boiling water
  • 1/4 cup cacao powder
  • 1 tsp vanilla

Method:

Soak the dates or prunes in the 1/2 cup of water for 5-10mins until softening, then blend with the other ingredients until smooth. Chill in the fridge and when cold, use to ice the cold cupcakes. This frosting is able to be piped too!
