Whipped Caramel Latte

An indulgent cafe style drink inspired by the Dalgona Whipped Coffee Trend! Contains more nutritious forms of sugar than regular white sugar, so is more beneficial to health. It also makes a nice dessert!

Date Caramel

Ingredients:

  • 3/4 cup dates & 1/2 cup hot water – soaked together 10-15mins
  • 1 tsp vanilla
  • pinch salt
  • 3 tb coconut cream

Method:

After soaking the dates, blend with the other ingredients until smooth.

Whipped Topping

Ingredients:

  • 1/3 cup aquafaba (chickpea liquid)
  • 1/8 tsp xanthan gum
  • 2-3 tb powdered coconut sugar
  • 1/2 – 1 tb instant coffee powder

Method:

Whip the aquafaba and xanthan gum together till fluffy, slowly whip in sugar and then coffee powder and whip until holding its shape.

To Assemble:

Put date caramel on the bottom of two glasses. Add 1/2 cup or more of coconut or almond milk (or any plant based milk) into each glass. Pipe or spoon on aquafaba mixture on the tops of each.

Finish with a little grated chocolate on top if liked or blowtorch the aquafaba meringue!

*Note – milk can be either hot or cold depending on if you want a warm or cold latte*
