Turn your banana bread into an even more indulgent treat! Great way to use up leftover or slightly stale banana bread. The banana also replaces both eggs and sugar in the batter, enjoy!
Ingredients:
- 4-5 slices of banana bread (eg: use my choc chip banana bread or coconut banana bread recipes!)
- 1 ripe banana
- 2/3 cup almond milk
- 1/2 tb flax powder
- 1/4 – 1/2 tsp cinnamon
- 1/4 tsp grated nutmeg
- 1 tsp vanilla
- a little coconut oil for frying
Method:
Blend all ingredients (except banana bread and oil) together until smooth.Pour into a flat bowl and soak the bread in, coating both sides.
Add a little coconut oil to a. fry pan on medium/high heat and fry the soaked banana bread about 2-3mins on each side until browned. Serve immediately.
*Can serve with whipped coconut cream or vegan ice-cream, drizzle with melted chocolate and dust with cinnamon or nutmeg, or add fresh fruit. Enjoy!*
