*This recipe serves 2 or 1 large*
Strawberry Jam Layer
- 2 cups strawberries
- 1 + 1/2 tb water
- 1 + 1/2 tsp chia seeds
Place all ingredients in a small pan and cook on medium/low heat for about 3-5mins until soft and thickened. Mash lightly to break up berries. Place in freezer to cool.
Peanut Butter Smoothie Layer
- 2 medium frozen bananas
- 3 tb peanut butter (all natural, or any other nut butter)
- 1 cup almond milk
Chop bananas and blend all ingredients together till smooth. Place in fridge until ready to assemble.
Strawberry Cream Topping
- 1/2 cup cooked strawberry jam mixture
- 1 cup coconut cream – cold (put can in fridge till cold, then use hard part of cream from top of can)
Whip together until well combined and creamy.
Place some strawberry jam mixture into the bottom of 1 or 2 glasses. Pour the smoothie mixture in, and then top with the strawberry cream. (Add a bit more of the strawberry jam and some peanut butter if liked). Enjoy!
*You can also heat some peanut butter till its more like the texture of melted chocolate, and drizzle it down the sides of the glasses before putting in the strawberry and smoothie mixtures!*
