Delicious, easy and healthy Breakfast – great for meal prep! There are endless possibilities for flavour combinations with this recipe!
Ingredients (serves 1-2):
- 1/2 cup oats
- 1 tsp chia seeds
- 1/2 cup almond milk
- 2 tb coconut cream
- 2 tsp vanilla
- 1-2tsp maple syrup
Method:
Stir all ingredients together and put into 1 or 2 jars or similar containers with lids. Place in the fridge overnight (Mixture will thicken in the fridge).
Eat cold or heat gently!
Add any toppings of choice. Mashed, pureed or cooked fruit can be added to the bottom of the containers or stirred in before filling with the oat mixture and putting in fridge. These will keep in the fridge up to 5 days or can be frozen for longer storage.
Flavour Ideas – Mashed banana, stewed apple/pear, strawberry compote, pumpkin puree, blueberries, dried fruits, spices eg: cinnamon/nutmeg, cacao powder, choc chips, nuts, toasted oats, toasted coconut, whipped coconut cream, vegan yogurt, peanut butter, date caramel or grated chocolate!
