Vegan Christmas Cocktails

Delicious dairy free cocktails great for Christmas parties or to relax with on Christmas Day! They are like desserts in themselves. The Snow Shake Recipe would also make a tasty treat for children if you omit the limoncello!

Limoncello Snow Shake (makes 1 – 2)

Ingredients:

  • 1/3 cup fresh lemon juice
  • zest of 1 lemon
  • 1/2 cup coconut cream
  • 1 tsp maple syrup
  • 2-3 tsp limoncello (can leave out for a child friendly drink)
  • 1 + 1/2 cup ice cubes
  • 1 cup custard ice cubes (put cold custard into ice cube trays and freeze till set)

Method:

Blend altogether till smooth and thick, and top with coconut ‘snow’ granita. Sprinkle with desiccated coconut and a raspberry.

Coconut ‘Snow’ Granita Recipe:

Ingredients:

  • 1 can coconut cream
  • 2 tb maple syrup
  • 1/4 cup water
  • juice of 1 small lemon

Method:

Combine altogether and pour into a shallow pan and freeze, scraping the top with a fork every 30mins for 2 hours (or freeze and grate).

Brandy Snowball

Ingredients:

  • 2/3 cup vanilla custard
  • 1-2 tsp lemon juice
  • 1 tb brandy
  • sparkling soda water & ice

Method:

Blend custard, juice and brandy till smooth. Pour into 1 or 2 glasses over ice and top up with sparkling water. Garnish with crushed freeze dried berries.

Vanilla Custard Recipe:

Ingredients:

  • 1 cup almond milk
  • 2 + 1/2 tbs cornflour
  • 1 cup coconut cream
  • 1/4 cup maple syrup
  • 1 tb vanilla

Method:

Blend or whisk ingredients together in a pan, bring to a simmer then cook on medium/low heat, stirring now and then till thickened. Cool and store in fridge and use for both drinks.

Gingerbread Baileys

Ingredients:

  • 1 cup coconut cream
  • 1/4 cup caramel sauce (use my Dulce De Leche recipe)
  • 1 tb espresso powder
  • 1 tsp vanilla
  • 1/4 tsp each cloves, nutmeg
  • 1 tsp cinnamon
  • 1 + 1/2 tsp grund ginger
  • 3 tb whiskey

Method:

Blend all together till smooth, and pour into 1-2 glasses. Garnish with a caramel sauce rim and crushed ginger biscuits (can use my Ginger Biscuits Recipe).
