Cashew Caramel Fudge

A tasty nutty treat, lower in sugar than traditional fudge but with an even better taste!

Cashew Caramel Fudge
Time 20 mins | Serves 8 – 10

  • 1/4 cup Maple Syrup
  • 1/4 cup Coconut Sugar
  • 1/3 cup Nut Butter
  • 2 tsp Vanilla Extract
  • 1/4 cup Coconut Oil
  • 1/8 tsp Salt
  • 1 cup roughly chopped Cashews


Start by mixing the Syrup, Sugar, Butter, Oil and Salt together in a saucepan and bring it to the boil, stirring constantly for about 2 – 3 mins, until its become thick and glossy. Next stir in the Vanilla, then stir in the Nuts. Spread the mixture onto a greaseproof paper lined tray and leave to set. Once set cut into pieces and store in the fridge.
