Ferrero Rocher Raw Cheesecake

Your favourite chocolate made into a rich & decadent Raw Vegan Cheesecake.

Ferrero Rocher Raw Cheesecake
Time 80 mins (plus overnight setting time) | Serves 8
Ingredients

Base & Top

  • 1 cup Oats
  • 1/2 cup Nuts (Hazelnut or Almond)
  • 3 tbsp Coconut Oil
  • 2 tbsp Nut Butter
  • 3 tbsp Maple Syrup
  • 2 tbsp Vanilla
  • 1 tsp Maca Powder
  • 2 tbsp Cacao Powder
  • pinch Salt

Filling

  • 1 1/2 cups Cashews (pre-soaked in boiling water for 20 – 30 mins)
  • 1 can of Coconut Cream (hard part)
  • 1/3 cup Hazelnut Butter
  • 1/2 cup Cacao Powder
  • 4 tbsp Maple Syrup
  • 2 tsp Vanilla
  • 1 tsp Maca Powder
  • pinch Salt
  • 1/2 – 1 cup crushed Roasted Hazelnuts
  • 1 cup Melted Dark Chocolate
  • extra melted Chocolate and Hazelnuts for the decorating

Method

Start by making the base. First blend the oats and nut together until broken down a bit. Add in the remaining ingredients and blend to a paste. Press half this mixture into a tin and chill in the freezer.

For the filling, simply blend all of the ingredients, except the hazelnuts and chocolate together in a blender till smooth. Stir in the chocolate and nuts then pour over the base and return to the freezer to set (around 30 – 60 mins).

Once set, press the remaining oat mixture onto the top of the cake and set in the freezer till firm, or overnight.

Unmould when ready to assemble. Top with melted chocolate and crushed nuts (see video for more).
