Marzipan Truffles

Ingredients

  • 1 cup almonds
  • 1 tb maple syrup
  • 1 tsp almond extract
  • About 3/4 cup dark chocolate (70% cocoa) chopped
  • Extra dark chocolate for making chocolate shavings
  • Optional – citrus dust (see my recipe for this!)

Method

Blend the almonds until fairly fine. Mix with the syrup and almond extract and knead to form a paste. Roll into about 10 small balls. Put in freezer to cool.

Meanwhile melt the 3/4 cup dark choc over very low heat or over simmering water. Use a vegetable peeler to make chocolate shavings with the extra choc. Mix in a little bit of the citrus peel dust if liked (This gives it a bit of a citrus flavour that goes well with the almond and chocolate).

Dip the marzipan balls in the melted chocolate and roll in the chocolate shavings then place on baking paper. Set in the freezer till chocolate is firm. Store in fridge or freezer.
