Cauliflower Rice Pudding (Kheer or Payasam)

A sweet old fashioned favourite with a healthy modern twist!

Ingredients:

  • 2 cups cauliflower rice
  • 1 + 1/2 cups coconut cream
  • 2 tsp vanilla
  • 1 + 1/2 tb lemon or lime zest
  • 2 tb maple syrup
  • 3 green cardamon pods (lightly crushed)
  • 3 cloves
  • 1 cinnamon stick
  • 1/4 – 1/2 tsp grated nutmeg
  • 1 tsp corn flour

*Make cauliflower rice by putting chopped cauliflower in food processor or blender & process until it looks rice-like!*

Method:

First steam the cauliflower rice about 15-20mins until tender and raw taste is gone.

Meanwhile mix together all the other ingredients in a pan and whisk it over medium-high heat. When it starts boiling, turn down heat and let it continue to simmer until cauliflower rice is cooked. Next add cauliflower rice to the coconut cream mixture and simmer about 10mins more. Cool a little and serve, or let it go cold and put in fridge (Make sure to remove whole spices before serving).

This can be served warm or cold.

When serving, sprinkle with extra grated nutmeg. Sprinkle with nuts, rose petals for kheer version or serve with jam or stewed fruit for British version. Enjoy!
